Discount redemptions_count now counts every redemption

redemptions_count on GET /api/v2/workspaces/:workspace_id/discounts and GET /api/v2/discounts/:id now reports how many times the discount was redeemed on an invoice, on both Stripe and Payments AI. On Stripe every invoice counts, renewals included; on Payments AI each customer redemption counts once, however many renewal invoices it covers. Before this, discounts on Stripe-connected workspaces always showed 0, and some discounts showed counts that belonged to other redemptions entirely.

The number now matches the "redeemed" count in the app, so you can rank codes, retire the ones nobody uses, or report on a promotion straight from the API and trust what it says.
